  • 1.5 pounds boneless skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional, for garnish) Add for freshness and color.

Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

  • In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and black pepper. Rub this seasoning mixture generously over the chicken thighs (or breasts), ensuring that each piece is well-coated.

Cooking

  • Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the seasoned chicken in the skillet and cook without moving for a few minutes until golden-brown.
  • Flip the chicken to brown the other side. When cooked through, the chicken should be firm to the touch and no longer pink inside.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, reduce the heat and add the butter. Once melted, add the minced garlic and stir until fragrant and slightly golden.
  • Return the chicken to the skillet and coat each piece with the garlic butter sauce for a couple of minutes.
  • Before serving, sprinkle with chopped parsley and spoon some sauce over the top.

Notes

Pat chicken dry before seasoning to help spices stick better. Avoid overcrowding the pan for even browning. Check garlic carefully to prevent burning.
