  • 1.5 pounds boneless skinless chicken breasts Pounded evenly for uniform cooking.
  • 1-2 teaspoons 21 Salute Seasoning or poultry seasoning Adjust to taste.
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 0.5 cup white wine or chicken broth Use a good-quality option.
  • 3 tablespoons unsalted butter
  • 1 tablespoon garlic, finely minced Be careful not to burn.
  • 2 teaspoons fresh parsley, optional Adds freshness if used.

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Season the pounded chicken breasts with 21 Salute or your favorite poultry seasoning, kosher salt, and black pepper.
  • Add the chicken to the skillet and cook without moving for about 5 minutes until it has a golden crust.
  • Carefully flip the chicken and cook for another 5 minutes until fully cooked and juicy.
  • Remove the chicken from the skillet and set aside to rest.

Sauce Preparation

  • Deglaze the skillet by adding white wine or chicken broth, scraping up browned bits from the bottom.
  • Let the liquid simmer, then add the unsalted butter and stir until melted.
  • Add the minced garlic and cook until fragrant, about 1 minute.
  • Return the cooked chicken to the skillet and spoon the sauce over it.
  • Top with fresh parsley if desired and serve hot.

Notes

For best results, allow chicken to rest after cooking. Adjust garlic levels based on personal taste.
