Ingredients
  

For the Chicken

  • 1.5 lb 1 1/2 lb (650g) chicken breast, cut into strips Lean protein

For the Potatoes

  • 1.5 lb 1 1/2 lb (650g) baby yellow potatoes, quartered Tender texture

Instructions
 

Preparation

  • In a large bowl, combine the chicken strips with soy sauce, olive oil, fresh cracked pepper, and hot sauce. Allow to marinate while preparing the potatoes.
  • Bring a pot of salted water to a boil and add the quartered baby potatoes. Parboil for about 8 minutes, until slightly tender.

Cooking

  • In a skillet over medium-high heat, mix olive oil with 1 tablespoon of butter. Add drained potatoes and cook until golden and tender, about 8 to 9 minutes.
  • Remove potatoes from skillet. Add remaining butter and cook marinated chicken for 1 minute on each side until golden.
  • Add minced garlic and optional crushed red chili flakes to the chicken and stir for additional flavor.
  • Incorporate the reserved marinade, fresh herbs, and sautéed potatoes into the skillet and heat through.
  • Season with salt and cracked pepper to taste before removing from heat.

Serving

  • Serve the dish warm, garnished with optional crushed chili pepper, fresh herbs, and parmesan if desired.

Notes

For best results, ensure chicken strips are evenly cut and do not overcrowd the skillet. Fresh herbs provide the best flavor, use less dried if substituting.
