  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder

Preparation

  • Cut the chicken breasts into bite-sized cubes for effective marination and even cooking.
  • In a mixing bowl, combine the grated Parmesan cheese, white vinegar, extra-virgin olive oil, lemon juice, garlic powder, dried oregano, onion powder, crushed red pepper flakes, salt, and pepper. Whisk until smooth.
  • Add the cubed chicken to the marinade, ensuring each piece is well-coated. Cover and let sit for about 30 minutes.

Grilling

  • Soak skewers in water if using wooden ones to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, leaving space between pieces.
  • Preheat the grill or grill pan over medium heat, then grill the kebabs, turning occasionally until the chicken is cooked through and charred.
  • Remove from grill and let the kebabs rest for a few minutes before serving.

Notes

For serving, pair these kebabs with a garden salad, rice, or tuck them into a pita with tzatziki. Leftovers can be shredded for salads or grain bowls.
