Ingredients
  

For the marinade

  • 4-5 slices ginger (approx. 2 tablespoons)
  • 2 cloves garlic (approx. 1½ tablespoons)
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons coconut cream
  • 2 tablespoons sugar
  • 1 tablespoon oyster sauce

For the glaze

  • 6 tablespoons coconut cream
  • tablespoons honey
  • 1 teaspoon soy sauce

For the peanut sauce

  • 2 tablespoons coconut cream
  • ¼ cup natural peanut butter (unsweetened)
  • 1 teaspoon rice vinegar
  • 1 teaspoon Thai red curry paste
  • 2 teaspoons maple syrup (or honey)
  • 2 teaspoons soy sauce for peanut sauce
  • 2-3 tablespoons water or enough to thin it out to your preferred consistency

Optional toppings

  • 1 teaspoon sesame oil optional
  • 1 teaspoon chili oil optional
  • Crushed peanuts optional, for topping

Instructions
 

Preparation

  • Finely chop the garlic and ginger. In a mixing bowl, combine these aromatics with the chicken and marinade ingredients (soy sauces, coconut cream, sugar, and oyster sauce). Allow the chicken to marinate in the fridge.

Skewer Preparation

  • Soak the wooden skewers in water to prevent burning. Thread the marinated chicken onto the skewers.

Glaze Preparation

  • Mix together the coconut cream, honey, and soy sauce in a bowl to create the glaze.

Grilling

  • Preheat your grill to high and grill the skewers, flipping every few minutes, until they develop a brown crust and are cooked through.
  • Brush the coconut cream glaze over the chicken while grilling, flipping the skewers frequently.

Serving

  • Serve the skewers over a bed of fresh green lettuce and alongside the peanut sauce.

Notes

Ensure the chicken is cut into uniform pieces for even cooking. If marinade is too thick, add a splash of water. Monitor the glaze closely to prevent burning. For added flavor, consider using fresh herbs or toppings.
