Ingredients

  • 1/3 cup Honey or agave syrup for vegan substitute
  • 3 tablespoons Lime Juice freshly squeezed
  • 3 tablespoons Soy Sauce tamari or coconut aminos for gluten-free

For the chicken and garnishes

  • 2 pieces Boneless Chicken Breasts or chicken thighs
  • 1 cup White Rice or brown rice for nutritional boost
  • 2 pieces Ripe Avocados for topping
  • 1/2 cup Red Onion or green onions
  • 1/4 cup Fresh Herbs Cilantro or Parsley
  • 1 teaspoon Black Pepper
  • Olive oil for cooking

Instructions
 

Preparation

  • In a mixing bowl, combine the honey, lime juice, and soy sauce, stirring until well blended.
  • Place the chicken in a shallow dish or resealable bag, pouring the marinade over it. Ensure each piece is generously coated and let marinate.

Cooking

  • Cook rice according to package instructions.
  • Heat a skillet over medium-high heat and add a splash of olive oil. Remove chicken from marinade and place in the skillet.
  • Cook chicken for several minutes on each side until golden brown and cooked through. Ensure glaze thickens in the pan.
  • Transfer chicken to a cutting board and let rest for a few minutes.

Assembly

  • Finely chop the red onion and fresh herbs.
  • Slice the chicken and serve over a bed of rice. Top with diced avocado, chopped red onion, and fresh herbs.

Notes

Use fresh lime juice for a brighter flavor. Adjust the honey based on sweetness preference. Let the chicken rest after cooking for better texture.
