Preparation

  • Combine the olive oil, soy sauce, lemon juice, minced garlic, smoked paprika, dried oregano, black pepper, and salt in a mixing bowl. Whisk until well incorporated.
  • Place the boneless chicken thighs in the bowl with the marinade, ensuring they are evenly coated. Let the chicken rest in the marinade for at least 30 minutes.

Grilling

  • Preheat your grill or grill pan over medium-high heat.
  • Place the marinated chicken thighs on the grill, making sure they are not overcrowded. Cook undisturbed for a few minutes to develop a nice char.
  • Flip the chicken thighs once they release easily from the grill, and monitor for a golden-brown color.
  • Continue grilling until the internal temperature reaches 165°F.
  • Remove the chicken from the grill and allow it to rest for a few minutes to let the juices redistribute.
