  • 1 cup Feta Cheese, Crumbled For topping
  • 2 cups Baby Spinach, Fresh Base for the bowls
  • 2 tablespoons Olive Oil For seasoning the chicken

Optional Ingredients

  • ½ cup Sun-Dried Tomatoes, Chopped Optional for added flavor
  • ½ cup Olives, Sliced Optional for variety

Preparation

  • Preheat your grill or grill pan. Season the chicken breasts with olive oil, crushed garlic, and any desired seasonings.
  • Place the seasoned chicken on the hot grill and cook thoroughly, turning occasionally for even cooking.
  • Once cooked, remove the chicken from the heat and let it rest for a few minutes.

Assembly

  • Prepare the fresh baby spinach in a bowl. Mix in sun-dried tomatoes and olives if desired.
  • Slice the grilled chicken into strips and place them over the spinach and optional ingredients.
  • Top the bowls with crumbled feta cheese.

Notes

Serve immediately for the best flavor and texture. Leftovers can be stored in an airtight container in the fridge for up to three days. You can reheat the bowls but avoid overheating.
