Grilled Chicken Skewers with Go-To Marinade

Ingredients
  

For the Marinade

  • 1.5 pounds boneless skinless chicken breast (cut into 1 1/2 inch cubes)
  • 1/2 cup low sodium soy sauce
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh minced garlic (or 1/2 teaspoon garlic powder)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried sage
  • 1/2 teaspoon fresh ground black pepper
  • 1 piece bay leaf
  • 1 teaspoon red pepper flakes
  • 1 can beer (Guinness stout or beer of choice)

For the Vegetables

  • 3 pieces bell peppers (trimmed, stems removed, and sliced into squares)
  • 1 piece zucchini (ends trimmed, cut into 1/2 inch slices)
  • 1 head garlic (cloves peeled)
  • 1 piece red onion (peeled, sliced into squares)

For Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper

Instructions
 

Prepare the Marinade

  • In a mixing bowl, whisk together the low sodium soy sauce, extra virgin olive oil, honey, and dried thyme.
  • Add the fresh minced garlic, oregano, sage, black pepper, bay leaf, and red pepper flakes to the mixture.

Marinate the Chicken

  • Pour the marinade over the chicken cubes in a large resealable bag or a container.
  • Seal the container or bag tightly and place it in the fridge to marinate.

Prepare the Vegetables

  • Trim and slice the bell peppers, cut the zucchini, peel the garlic cloves, and slice the red onion.
  • Drizzle the vegetables with olive oil and season with Kosher salt and black pepper.

Assemble the Skewers

  • Alternate threading the marinated chicken and prepared vegetables onto the skewers.

Grill the Skewers

  • Preheat the grill to medium-high heat.
  • Place the skewers on the grill and optionally brush with any remaining marinade.
  • Grill until the chicken is cooked through and vegetables are tender, turning occasionally.

Rest and Serve

  • Remove the skewers from the grill and let them rest for a couple of minutes before serving.

Notes

Make sure to soak wooden skewers in water for 30 minutes before grilling to prevent burning. Adjust marinade based on your taste preferences and use seasonal vegetables for variety.
