Ingredients

  • 1 lb ground chicken
  • 1 tbsp neutral cooking oil for stir frying
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 1 cup carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce or tamari
  • 1/4 cup water
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • red pepper flakes, to taste (optional)
  • green onions, sliced (for garnish)

Instructions
 

Preparation

  • Whisk together the soy sauce, water, honey, sesame oil, and cornstarch in a small bowl until smooth. Set aside.

Cooking

  • Heat a large wok or skillet over high heat, then add the neutral cooking oil. Once shimmering, add the ground chicken and cook, breaking it apart, until browned and fully cooked.
  • Stir in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
  • Add the sliced carrots and broccoli florets. Cook for 2 to 3 minutes, stirring frequently to maintain crunch.
  • Toss in the sliced bell peppers and snap peas. Stir fry for an additional 2 minutes until tender yet vibrant.
  • Pour in the prepared sauce, toss everything to coat, and cook for 1 to 2 minutes longer until the sauce thickens.
  • Serve hot, garnished with sliced green onions and red pepper flakes if desired.

Notes

Pairs well with steamed rice or quinoa. Leftovers can be stored for lunch or served with egg rolls or spring rolls.
