Preparation

  • Begin by heating the olive oil in a skillet over medium heat.
  • Add the ground chicken and brown it evenly using a spatula or wooden spoon.
  • Sprinkle the taco seasoning into the browned chicken and stir well to combine.
  • Add the undrained pinto beans to the skillet and stir gently.
  • Pour in the canned diced tomatoes and green chiles, mixing thoroughly.
  • Add the frozen roasted corn and continue to stir.
  • Pour in the chicken broth or water to bind the ingredients.
  • Prepare a casserole dish by layering half of the tortilla strips at the bottom.
  • Spoon half of the chicken and bean mixture over the tortilla strips.
  • Add the remaining tortilla strips on top of the chicken and bean layer.
  • Top with the rest of the chicken and bean mixture.
  • Finally, sprinkle the shredded Mexican cheese evenly over the top layer.
  • Place the casserole dish in the oven and bake until cheese is melted and bubbly.

Notes

Ensure the chicken is fully browned before adding other ingredients. Store leftovers in an airtight container for up to four days in the fridge.
