  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 cup chopped fresh parsley

Preparation

  • Begin by heating the olive oil in a large skillet over medium heat.
  • Add the ground chicken and use a spoon to break it into smaller pieces while it cooks until golden brown, about 5 to 7 minutes.
  • Stir in the diced onion and minced garlic, cooking until the onion becomes translucent and fragrant, about 3 to 4 minutes.
  • Add the diced zucchini and let it cook for an additional 2 minutes.
  • Stir in the rice, chicken broth, salt, black pepper, paprika, and cumin. Mix well to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and liquid is absorbed, about 15 to 20 minutes.
  • Remove from heat and let sit covered for about 5 minutes before fluffing the rice with a fork and sprinkling with fresh parsley.

Notes

This dish pairs well with a salad or crusty bread. Leftovers can be stored in the fridge for quick meals and can be frozen for meal prep.
