  • 1 pound ground chicken
  • 1 tablespoon vegetable oil for cooking
  • 1 tablespoon ginger root, minced fresh ginger preferred
  • 2 teaspoons garlic, minced
  • 1/4 teaspoon crushed red pepper adjust for spice preference
  • 1 tablespoon rice wine substitute with white wine if necessary
  • 2 tablespoons water for sauce preparation
  • 1/2 teaspoon sesame oil
  • 4 teaspoons soy sauce
  • 5 tablespoons sugar for sauce preparation
  • 5 tablespoons white vinegar
  • 1/2 orange zest of ½ orange
  • 3 tablespoons water, divided one tablespoon set aside for cornstarch mix
  • 1 tablespoon cornstarch for thickening the sauce

Instructions
 

Preparation

  • In a mixing bowl, combine the rice wine, two tablespoons of water, sesame oil, soy sauce, sugar, white vinegar, and the zest of half an orange. Stir until the sugar has dissolved.
  • Dissolve one tablespoon of cornstarch in the remaining tablespoon of water and set aside.

Cooking

  • In a large pan, heat one tablespoon of vegetable oil over medium heat.
  • Add the ground chicken to the pan and cook undisturbed until a nice crust forms, about a few minutes.
  • Break apart the chicken gently and continue cooking until fully cooked through.
  • Add the minced ginger, garlic, and crushed red pepper to the pan. Cook for about ten seconds.
  • Pour the prepared orange sauce into the pan and bring to a boil, stirring occasionally.
  • Add the cornstarch mixture to the pan and stir rapidly until the sauce thickens slightly.

Notes

Serve over rice or with steamed vegetables. Excellent as leftovers or in lettuce wraps.
