Healthy Chicken Pomodoro

Ingredients
  

For the Chicken

  • 1.5 lb boneless skinless chicken breasts
  • 1 tbsp extra virgin olive oil for searing
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

For the Sauce

  • 2 tbsp fresh minced garlic
  • 1 small yellow onion, finely diced
  • 24 oz grape tomatoes, halved
  • 1 cup chicken broth
  • 2 tbsp chopped fresh basil for garnish
  • 1 tsp white sugar to balance acidity
  • Parmesan cheese for serving

Instructions
 

Preparation

  • Combine Italian seasoning, garlic powder, salt, and black pepper in a small bowl.
  • Coat the chicken breasts with the seasoning mixture.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken breasts and sear for a couple of minutes on each side until golden brown.
  • Remove chicken and set aside.
  • Lower the heat and add minced garlic and diced onion to the skillet; sauté until the onion softens.
  • Add halved tomatoes and chicken broth; scrape browned bits from the bottom of the skillet.
  • Simmer for 5 minutes to soften the tomatoes.
  • Stir in basil and sugar; return chicken to the skillet, cover, and simmer for an additional 5 to 8 minutes.

Serving

  • Plate chicken pomodoro and top with extra basil and Parmesan cheese.

Notes

Pair with steamed vegetables or a salad. Leftovers can be reheated easily. Consider serving with whole grain pasta or rice.
