Preparation of Marinade

  • In a mixing bowl, combine the olive oil, brown sugar, soy sauce, lemon zest, chopped parsley, chopped thyme, salt, pepper, and minced garlic. Mix until smooth.

Marinating Chicken

  • Place chicken breasts in a large resealable bag or shallow dish and pour the marinade over them, making sure they are well-coated. Seal the bag or cover the dish and let it sit for at least 30 minutes.

Grilling Chicken

  • Preheat your grill or grill pan. Ensure grates are clean and lightly oiled to prevent sticking.
  • Remove chicken from marinade, allowing excess to drip off. Place chicken on the hot grill and cook for about 6 to 8 minutes on one side.
  • Flip the chicken breasts and continue to cook for another 6 to 8 minutes, or until they reach a safe internal temperature.

Resting Chicken

  • Remove chicken breasts from the grill and let them rest for a few minutes to keep them juicy.

Notes

For added flavor, let the chicken marinate longer. Always check internal temperature for doneness.
