  • 2 large boneless, skinless chicken breasts Ensure they are evenly sized for consistent cooking.

For the Creamy Garlic Sauce

  • 1 cup plain Greek yogurt
  • 3 cloves garlic, finely minced or grated
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon salt For sauce seasoning.
  • ¼ teaspoon black pepper For sauce seasoning.

For Serving

  • 3 cups cooked white or brown rice Use as a base for the bowls.

Preparation

  • In a bowl, mix the olive oil, minced garlic, paprika, onion powder, salt, and black pepper. Coat the chicken breasts well with this mixture and let them marinate to enhance flavor.
  • Bring a pot of salted water to a boil. Once boiling, add the broccoli florets and cook until vibrant green and tender-crisp. Drain and toss with olive oil, salt, and black pepper.

Grilling and Sauce Preparation

  • Preheat grill or grill pan on medium-high heat. Grill the marinated chicken, turning once until fully cooked.
  • In a bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and black pepper. Whisk until smooth.

Assembly and Serving

  • Let the chicken rest before slicing. Assemble bowls starting with rice, then top with chicken slices, broccoli, and a drizzle of creamy garlic sauce.
