Ingredients
  

For the sauce

  • 1/3 cup honey
  • 1/4 cup lower-sodium soy sauce Using low-sodium soy sauce helps balance flavors.

  • 2 tablespoons dark soy sauce or soy sauce
  • 2 tablespoons oyster sauce

  • 1 tablespoon Shaoxing wine or dry sherry
  • 2 teaspoons grated fresh ginger Fresh ginger enhances flavor infusion.
  • 2 teaspoons toasted sesame oil

For the chicken

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 2 tablespoons tap water Used for cornstarch mixture.

For thickening

  • 1 tablespoon cornstarch Mix with water to thicken the sauce.

For the noodles

  • 16 ounces fresh lo mein noodles, cooked Follow package directions for cooking.
  • 3 large scallions, thinly sliced Plus more for garnish.
  • White sesame seeds For garnish.

Instructions
 

Preparation

  • Gather all your ingredients.
  • In your slow cooker, stir together the honey, lower-sodium soy sauce, minced garlic, dark soy sauce, oyster sauce, Sriracha, Shaoxing wine, grated ginger, toasted sesame oil, and kosher salt.

Cooking

  • Place the chicken thighs in the slow cooker, ensuring they are fully submerged in the honey mixture.
  • Cover the cooker and cook on low for several hours until the chicken is tender enough to shred.
  • After cooking, prepare the cornstarch mixture by stirring together the water and cornstarch in a small bowl until smooth.
  • Transfer the cooked chicken to a cutting board and shred it using a fork.
  • With the slow cooker on high, pour in the cornstarch mixture and stir until the sauce thickens slightly.
  • Return the shredded chicken to the slow cooker and add the cooked lo mein noodles and sliced scallions, gently tossing everything together.

Serving

  • Serve the noodle mixture straight from the slow cooker, dividing evenly among bowls.
  • Garnish with additional scallions and a sprinkle of white sesame seeds.

Notes

For best flavor, use fresh garlic and ginger. Adjust cooking time to avoid overcooked chicken. Garnishing enhances the final appearance and flavor.
