Ingredients
  

For the Chicken

  • 2 lbs chicken thighs, about 8 pieces, boneless and skinless
  • 1/2 tsp fine sea salt
  • 4 cloves garlic, finely minced
  • 1/3 cup extra virgin olive oil
  • 2 1/2 Tbsp red wine vinegar
  • 1/2 tsp dried oregano, or 1 Tbsp fresh oregano
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp crushed red pepper flakes

For the Mango Salsa

  • 1 cup fresh mango, diced
  • 1 cup flat-leaf parsley, finely chopped For added flavor
  • a pinch sea salt

Instructions
 

Marinating the Chicken

  • In a large mixing bowl, combine the minced garlic, olive oil, red wine vinegar, oregano, salt, black pepper, and crushed red pepper flakes. Stir until everything is well mixed.
  • Add the chicken thighs, ensuring they are evenly coated with the marinade. Cover and let it sit for at least 30 minutes, or refrigerate for a couple of hours.

Preparing the Mango Salsa

  • Dice fresh mango and mix it in a bowl with chopped flat-leaf parsley and a pinch of sea salt. Set the salsa aside to let the flavors meld.

Cooking the Chicken

  • Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, letting any excess drip off.
  • Place the chicken in the pan, ensuring not to overcrowd it. Cook for about 5-7 minutes on each side, until golden brown and fully cooked through.
  • Let the chicken rest for a few moments before slicing.

Serving

  • Serve the chicken on a platter with a generous scoop of mango salsa on top or on the side.

Notes

This dish pairs wonderfully with a simple green salad or steamed vegetables. Leftovers hold up well in the fridge, making it a great option for meal prep.
