  • 2 large chicken breasts (about 1.5 lbs total), cut into bite-size cubes
  • 2 cups cooked rice (white, jasmine, or brown)
  • 1.5 cups corn kernels (fresh, frozen, or canned, drained)
  • 2 tbsp olive oil or avocado oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • Salt and pepper to taste
  • 1 lime (juiced)
  • 0.25 cup red onion (thinly sliced)
  • 2 tbsp chopped cilantro

Sauce Ingredients

  • 0.5 cup plain Greek yogurt (for sauce)
  • 1 tbsp mayonnaise (for sauce)
  • 1 clove garlic (minced) (for sauce)
  • 0.5 lime (juice and zest) (for sauce)
  • 1 tbsp finely chopped cilantro (for sauce)

Instructions
 

Preparation

  • Start by preparing your ingredients. Cut the chicken breasts into bite-sized cubes, ensuring uniform pieces for even cooking.
  • If you’re using fresh corn, cut the kernels off the cob; otherwise, measure out your frozen or canned corn.

Cooking Chicken

  • Heat a large skillet over medium heat and add the olive oil or avocado oil.
  • Once the oil is shimmering, add the chicken pieces, allowing them to sizzle as they hit the pan.
  • Season the chicken with salt, pepper, smoked paprika, chili powder, and garlic powder, stirring occasionally until browned and cooked through.

Combine Corn

  • Once the chicken is cooked, add the corn to the skillet. Mix well and allow the corn to warm up.

Prepare Sauce

  • In a mixing bowl, combine the plain Greek yogurt, mayonnaise, minced garlic, juice and zest of half a lime, and finely chopped cilantro. Mix until smooth.

Final Assembly

  • After the chicken and corn have cooked together, remove the skillet from heat. Add the cooked rice.
  • Squeeze the juice of a whole lime over everything and mix gently.
  • Serve the chicken bowl in individual portions, garnishing each with thinly sliced red onion and a sprinkle of chopped cilantro.
  • Drizzle the creamy sauce over the top.

Notes
