  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano

Main Ingredients

  • 1 tablespoon extra virgin olive oil For cooking chicken
  • 2 pounds chicken breasts or thighs, skinless and boneless Use preferred cut
  • 1 cup chicken broth For moisture and flavor

Preparation

  • Gather all your ingredients and mix together the chili powder, paprika, salt, garlic powder, onion powder, cumin, black pepper, and dried oregano in a small bowl.

Cooking

  • In a large skillet, heat the extra virgin olive oil over medium heat. Add the chicken and sear until it develops a golden crust.
  • Sprinkle the seasoning mix evenly over the chicken and turn as needed to coat all sides.
  • Pour the chicken broth into the skillet, cover with a lid, and steam the chicken until fully cooked.
  • Remove the chicken from the skillet and let it rest before slicing into strips.
  • Serve the sliced chicken over cooked rice and drizzle some of the broth on top.

Notes

Serve with a fresh green salad or roasted vegetables. Leftovers can be reheated in the microwave. This dish can also be enjoyed over tortillas for a taco-style meal.
