Base Ingredients

  • ½ tablespoon olive oil For sautéing
  • 1 medium white onion, chopped Chopped for flavor base
  • 1 can mild green chiles Or substitute with 2 seeded and diced jalapenos
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • ¼ teaspoon coriander
  • ¼ teaspoon dried oregano
  • 4 cups low sodium chicken broth
  • 2 (15 ounce) cans chickpeas, rinsed and drained Provides creaminess
  • ¾ teaspoon salt Plus more to taste
  • 1 teaspoon freshly ground black pepper
  • 1.5 pounds boneless skinless chicken thighs (or chicken breast)
  • ½ cup frozen corn Add for sweetness and texture
  • 1 medium lime, juiced For brightness
  • cup fresh, chopped cilantro For garnish
  • as needed Tortilla strips or chips for garnish

  • as needed Avocado slices for garnish

Instructions
 

Preparation

  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Add chopped onion and green chiles, cooking until the onion is translucent, about 3 to 4 minutes.
  • Stir in ground cumin, chili powder, coriander, and dried oregano, cooking for about 30 seconds until fragrant.
  • Pour in the chicken broth and add one can of drained chickpeas, stirring in the uncooked chicken pieces.
  • Season with salt and black pepper, and let simmer over medium-low heat for 20 to 30 minutes.

Shredding and Thickening

  • After 20 minutes, use a slotted spoon to remove the chicken and shred with two forks directly in the pot.
  • Stir in fresh lime juice and chopped cilantro.
  • Blend the remaining can of chickpeas with ½ cup of water or broth until smooth, then pour back into the pot along with the corn.
  • Simmer for an additional 5 to 10 minutes to combine flavors.

Serving

  • Garnish with tortilla chips, extra cilantro, avocado slices, and a lime wedge before serving.

Notes

Adjust spice levels based on your preference by using mild or spicy green chiles. This chili stores well and can be frozen for future meals.
