  • ½ cup shredded Parmesan room temperature for richness
  • ½ cup chicken stock or more for thinning the sauce

Preparation

  • In a large skillet, begin by heating olive oil over medium heat.
  • Cut the chicken breasts horizontally to create thinner cutlets.
  • Season both sides generously with salt and pepper.
  • Lightly coat each piece of chicken in flour.
  • Sear the chicken for about 5 minutes on each side until golden-brown.

Sauce Preparation

  • Transfer the browned chicken to a plate to rest.
  • In the same skillet, add the chopped onion, garlic, and sun-dried tomatoes. Cook for about 5 minutes.
  • Deglaze the pan with white wine, scraping up any browned bits, and allow it to bubble gently.
  • Pour in the heavy cream and bring to a simmer, stirring in the shredded Parmesan until smooth.
  • If the sauce is too thick, add chicken stock to achieve desired consistency.
  • Return the chicken to the skillet to reheat in the sauce.
  • Top with fresh basil before serving.

Notes

Ensure not to overcrowd the skillet while searing and let the heavy cream warm slightly before adding.
