For the Marinade

  • 2 tablespoons canola oil helps with cooking and adds moisture
  • 3 cloves garlic, minced adds a savory depth
  • 1 cup onion, diced contributes sweetness and texture
  • 1 ½ cups Texas style BBQ sauce provides a rich and tangy flavor
  • 3 tablespoons honey sweetens and enhances the glaze
  • 3 tablespoons whole grain Dijon mustard adds a sharp, nuanced flavor
  • 1 teaspoon reduced sodium soy sauce brings umami
  • 1 teaspoon coarsely ground black pepper gives a mild heat
  • ½ teaspoon ground ginger adds warmth and a hint of spice

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch chunks serves as the protein base

Instructions
 

Preparation of Marinade

  • Heat 1 tablespoon of canola oil in a small saucepan over medium heat. Once the oil is glistening, add the minced garlic and diced onion. Cook them together, stirring occasionally, until the onions become translucent, which takes about 3 to 4 minutes.
  • Stir in the Texas style BBQ sauce, honey, whole grain Dijon mustard, reduced sodium soy sauce, coarsely ground black pepper, and ground ginger. Continue to simmer this mixture over reduced heat for about 3 to 5 minutes.
  • Allow the sauce to cool for about 10 minutes.

Marinating the Chicken

  • In a large Ziploc bag, add the chicken chunks along with half of the cooled BBQ sauce mixture. Seal the bag and shake gently to coat the chicken evenly.
  • Marinate the chicken for at least 2 hours, or if possible, overnight, up to 8 hours.

Grilling the Kabobs

  • Preheat the grill to medium-high heat.
  • Drill the marinated chicken onto skewers and brush them with the remaining tablespoon of canola oil. Season with salt and pepper.
  • Place the skewers on the grill. Cook for about 10 to 12 minutes, turning occasionally, until the chicken is completely cooked through and reaches an internal temperature of 165°F.
  • In the last couple of minutes of cooking, brush the kabobs with the reserved BBQ sauce mixture for added flavor.
  • Serve the kabobs immediately with the remaining BBQ sauce on the side.

Notes

For extra flavor, consider letting the chicken marinate overnight. Avoid overcrowding the skewers for even cooking. If using wooden skewers, soak them in water for about 30 minutes before use.
