Ingredients
  

For the Chicken

  • 1 to 1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp arrowroot powder, or cornstarch
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp olive oil, divided

For the Vegetables

  • 12 oz green beans, trimmed
  • 1/4 cup green onions, chopped
  • Sesame seeds optional garnish

For the Sauce

  • 1/4 cup chicken broth
  • 3 Tbsp low-sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1/2 tsp grated ginger, or 1/4 tsp ground ginger
  • 2 tsp arrowroot powder, or cornstarch (for sauce)

Preparation

  • Start by prepping your chicken. Cut the boneless skinless chicken breasts into roughly 1-inch pieces to ensure even cooking. In a bowl, combine the arrowroot powder, garlic powder, onion powder, salt, and black pepper. Toss the chicken pieces in this mixture until they are lightly coated.

Cooking the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer without overcrowding the pan. Cook until golden brown and fully cooked through, about a few minutes.

Cooking the Green Beans

  • Remove the chicken from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and add the trimmed green beans. Stir frequently, cooking until they are bright green and tender-crisp.

Prepare the Sauce

  • In a small bowl, whisk together the chicken broth, low-sodium soy sauce, honey, minced garlic, and ginger. Mix in the additional arrowroot powder or cornstarch for a thicker sauce.

Combine and Serve

  • Return the chicken to the skillet and pour the sauce over everything. Stir to coat evenly and allow to simmer until the sauce thickens slightly. Remove from heat and sprinkle with green onions.

Notes

Serve with rice or quinoa to soak up the sauce. Leftovers can be enjoyed cold in wraps or salads. Adjust garlic and ginger levels to taste.
