  • 1 lb boneless skinless chicken breast, cut into 1-inch cubes
  • 2 teaspoons cornstarch (optional) Helps with texture
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, finely minced Use fresh for best flavor
  • 1/4 cup honey
  • 3 tablespoons low-sodium chicken stock
  • 1-2 tablespoons lemon juice Adjust to taste
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon red chili pepper flakes, for garnish For a bit of heat
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions
 

Preparation

  • Place the chicken breast cubes in a large salad bowl. If using, sprinkle cornstarch over the chicken, followed by salt and black pepper. Toss to coat.
  • In a large skillet, heat the olive oil over medium-high heat. Add butter and let it melt.

Cooking

  • Add the chicken cubes to the skillet and cook until golden brown on all sides, about 6-8 minutes.
  • Pour in the minced garlic, honey, chicken stock, lemon juice, and optional hot sauce. Stir to coat the chicken.
  • Allow the mixture to simmer for a couple of minutes until the sauce reduces and thickens.

Serving

  • Garnish with chopped parsley and red chili pepper flakes. Serve over rice.

Notes

Make sure the chicken pieces are uniform in size for even cooking. Adjust honey and lemon juice to taste preference.
