Ingredients
  

For the Meatballs

  • 1 pound ground chicken
  • 1/2 cup Panko breadcrumbs Can substitute with regular breadcrumbs
  • 1/4 cup thinly sliced green onion
  • 1 tablespoon soy sauce Low sodium preferred
  • 2 cloves garlic, finely minced or grated
  • 2 teaspoons ginger paste
  • 1 teaspoon toasted sesame oil
  • 1 each egg yolk
  • 1 pinch Kosher salt A few large pinches
  • 1 pinch ground black pepper A couple pinches
  • 1 tablespoon olive oil

For the Sauce

  • 6 cloves garlic, minced
  • 2/3 cup low sodium soy sauce
  • 2 tablespoons seasoned rice vinegar
  • 1 cup honey
  • 1/4 cup thinly sliced green onion
  • 1 pinch Kosher salt
  • 1 pinch Fresh cracked pepper
  • Sesame seeds (for garnish)
  • Rice (for serving)
  • Pickled veggies (for serving)

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a large bowl, combine all the ingredients for the chicken meatballs: ground chicken, Panko breadcrumbs, sliced green onion, soy sauce, minced garlic, ginger paste, toasted sesame oil, egg yolk, Kosher salt, and black pepper.
  • Mix everything just until it’s well combined, being careful not to overwork the mixture.
  • Wet your hands with water or olive oil and roll the mixture into uniform-sized meatballs, placing them on a greased baking sheet.

Cooking

  • Bake the meatballs for 15 to 25 minutes, ensuring they are cooked through.
  • While the meatballs are baking, heat olive oil in a saute pan over medium-low heat, then add the minced garlic and cook gently.
  • Stir in the low sodium soy sauce, seasoned rice vinegar, honey, sliced green onion, a couple pinches of black pepper, and a small pinch of salt. Bring to a gentle simmer and allow the sauce to thicken slightly.
  • Once the meatballs are fully cooked, add them to the sauce and toss gently to coat. Cook together for another minute, allowing flavors to meld.
  • Garnish with sesame seeds and thinly sliced green onion before serving.

Notes

These meatballs can be served over rice with pickled veggies for added crunch. For uniform meatballs, consider using a cookie scoop. They can also be chilled before baking to help maintain their shape.
