Ingredients
  

For the marinade and chicken

  • 1 pound chicken tenders (or skinless, boneless chicken breast cut into strips)
  • 1 Juice of one lime
  • 3 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon sesame seeds
  • 1 teaspoon coriander seeds
  • 1 tablespoon crushed cashews
  • 1 tablespoon extra virgin olive oil plus extra, to serve
  • to taste Salt and cracked black pepper

For the quinoa and herbs

  • 1 cup quinoa, cooked
  • 1/2 cup cilantro leaves, chopped
  • 1/2 cup flat-leaf parsley leaves, chopped
  • 2 scallions, thinly sliced

Instructions
 

Preparation

  • Start by grinding all the spices: cumin, fennel, sesame, coriander seeds, and cashews. Use a grinder or mortar to create a fragrant spice mix.
  • Mix the ground spices with lime juice, minced garlic, olive oil, salt, and pepper in a large bowl until well combined.
  • Rub the marinade all over the chicken tenders and let them marinate for 15-20 minutes.

Cooking

  • Heat a skillet and stir-fry the marinated chicken tenders until golden and cooked through.
  • Add the leftover marinade to the skillet near the end of cooking and let it cook down for a couple more minutes.

Serving

  • In a bowl, combine the cooked quinoa with chopped cilantro, parsley, and scallions. Toss gently.
  • Serve the chicken over the herbed quinoa, sprinkle with sesame seeds, and drizzle with olive oil before serving.

Notes

Make sure to let the chicken marinate to enhance its flavor. Adjust the amount of lime juice based on your preference for acidity.
