Ingredients
  

For the Chicken

  • 2¼–2½ lbs. boneless, skinless chicken breasts Meaty texture

For the Sauce

  • 1 cup soy sauce Low sodium if preferred
  • 1/2 cup honey Adds sweetness
  • 1 Tbsp. Shaoxing wine Enhances flavor
  • 1-2 Tbsp. sriracha Optional for spicy lovers
  • 1 Tbsp. mirin For sweetness
  • 2 tsp. garlic Minced
  • 1 tsp. ginger Minced
  • 1 Tbsp. cornstarch To thicken sauce
  • 2 Tbsp. water To mix with cornstarch

  • 1-2 heads broccoli Roasted or steamed, for freshness

Preparation

  • Start by prepping the chicken. Pat the chicken breasts dry to remove excess moisture, which helps achieve a crispier texture when cooked. Cut the chicken into bite-sized cubes.
  • In a mixing bowl, toss the chicken cubes with cornstarch until they are evenly coated.

Cooking

  • Heat oil in a large skillet over medium-high heat. Once shimmering, add the chicken in a single layer. Cook for 6-8 minutes, turning occasionally, until golden brown and crispy.
  • While the chicken is cooking, prepare the sauce by whisking together soy sauce, honey, Shaoxing wine, sriracha (if using), mirin, garlic, and ginger in a separate bowl.
  • Once the chicken is cooked through, reduce heat to medium and pour the sauce over the chicken. Stir gently to coat.
  • Allow the sauce to come to a gentle simmer.
  • Prepare your cornstarch slurry by whisking together cornstarch and water in a small bowl until smooth.
  • Add the cornstarch slurry to the skillet with the chicken and sauce, whisking gently to combine.
  • Let the mixture cook for a few minutes until the sauce thickens, about 3-5 minutes.

Serving

  • Divide cooked rice among bowls and top with honey garlic chicken. Add steamed or roasted broccoli and garnish with sesame seeds and sliced green onions.

Notes

For a crispier chicken texture, ensure the chicken pieces are completely dry before tossing in cornstarch. Adjust the sriracha for desired heat. Avoid overcrowding the skillet for even cooking.
