  • 8 pieces skinless and boneless chicken thighs
  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Cooking Ingredients

  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic
  • 110 g honey (about 1/3 cup)
  • 80 ml chicken stock (about 1/3 cup)
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1/2 tsp chili flakes
  • 1 tbsp finely chopped fresh parsley
  • as needed boiled rice for serving

Preparation

  • In a large mixing bowl, combine the chicken thighs with cornflour, salt, and pepper. Toss until evenly coated.

Cooking

  • Heat the vegetable oil in a frying pan over medium heat. Add the chicken thighs and cook until browned on one side.
  • Flip the chicken and add the unsalted butter and minced garlic to the pan. Cook until the garlic is fragrant.
  • Pour in the honey, chicken stock, rice vinegar, and light soy sauce. Stir to combine and ensure the chicken is coated.
  • Allow the sauce to simmer for a few minutes until it thickens slightly, stirring occasionally.
  • Remove from heat and stir in the finely chopped parsley and chili flakes before serving.

Notes

Serve over boiled rice and consider adding steamed vegetables. The chicken can be shredded for salads or wraps if there are leftovers. Ensure to pat the chicken dry before coating with cornflour for better adherence.
