  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil or neutral cooking oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon ground black pepper
  • 6 cloves garlic, minced (or 1 tablespoon garlic powder)

Sauce Ingredients

  • 1/3 cup honey
  • 3 tablespoons low-sodium soy sauce (or tamari)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/2 teaspoon red pepper flakes, optional
  • 2 teaspoons cornstarch + 2 tablespoons water, optional

Garnish

  • 2 tablespoons fresh parsley or green onions, chopped

Instructions
 

Preparation

  • Pat the chicken thighs dry with a paper towel and season with half a teaspoon of salt and black pepper.

Cooking

  • Heat the oil in a skillet over medium-high heat until shimmering. Sear the chicken thighs for about 3-4 minutes on each side until golden brown.
  • Lower the heat slightly. Add minced garlic, honey, soy sauce, rice vinegar, and optional red pepper flakes to the skillet. Stir to coat the chicken.
  • Reduce heat to medium-low and simmer for about 5-7 minutes, occasionally spooning the sauce over the chicken.
  • For a thicker sauce, mix cornstarch with water to create a slurry and stir into the sauce. Simmer for an additional 2-3 minutes until it thickens.

Finishing Touches

  • Finely dice fresh parsley or green onions and stir into the chicken. Serve warm with the sauce.

Notes

For a complete meal, serve with steamed jasmine or basmati rice and sautéed vegetables. Store leftovers in an airtight container; they last in the fridge for 3-4 days or can be frozen for up to 3 months.
