Ingredients
  

For the Chicken

  • 4 pieces Chicken breasts
  • 1/3 cup Honey Use fresh honey for best flavor
  • 1/4 cup Lime juice Freshly squeezed recommended
  • 2 tablespoons Olive oil Adjust for flavor preference
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper Adjust based on taste

For the Mango Salsa

  • 1 cup Mango, diced Use ripe mango for best flavor
  • 1/4 cup Red onion, diced
  • 1/4 cup Cilantro, chopped
  • 1 tablespoon Jalapeño, minced (optional) Remove seeds for less heat

Instructions
 

Preparation

  • In a mixing bowl, blend honey, lime juice, olive oil, minced garlic, salt, and pepper until well combined.
  • Place the chicken breasts into a shallow dish and pour the marinade over them, ensuring they are thoroughly coated. Cover and marinate.
  • Prepare the mango salsa by dicing the mangoes and red onion, and chopping the cilantro. If using jalapeño, mince it as well. Combine in a bowl and mix gently.

Cooking

  • Heat a griddle or grill pan over medium-high heat. Place the marinated chicken breasts on the pan and cook until golden brown.
  • Flip the chicken and cook until no longer pink in the center and juices run clear, about 5-7 minutes.
  • Remove chicken from heat and let it rest for a couple of minutes before slicing.

Serving

  • Serve the sliced chicken alongside the mango salsa.

Notes

For best results, allow chicken to marinate for at least 15-30 minutes. Use fresh lime juice and rest the chicken after cooking for juiciness.
