  • Start by heating the olive oil in a large skillet over medium heat.
  • Season the chicken thighs on both sides with salt, black pepper, and paprika.
  • Add the seasoned chicken thighs to the skillet and cook them for about 5 to 6 minutes on each side.
  • In a bowl, mix together the honey, Dijon mustard, whole grain mustard, and minced garlic.
  • Once the chicken is browned, reduce the heat to medium-low and pour the honey mustard mixture over the chicken thighs.
  • Also add the chicken broth to the skillet.
  • Cover the skillet and let everything simmer for 10-12 minutes.
  • Once the chicken has reached an internal temperature of 165°F, remove it from the heat.
  • Transfer the chicken thighs to a serving dish and sprinkle the chopped parsley over them.

Notes

Make sure the skillet is hot before adding the chicken for a good sear. Adjust mustard ratios for taste preference. Let the chicken rest after cooking to retain moisture.
