Preparation

  • In a mixing bowl, combine the sliced peaches, peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix well until the ingredients are combined and the peaches are slightly broken down, creating a chunky sauce.
  • Season the chicken thighs with kosher salt, black pepper, and chili powder, ensuring each piece is coated evenly.

Cooking

  • Heat two tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs to the pan and sear for about 5-7 minutes per side until browned and cooked through.
  • Reduce the heat to medium-low and add the jalapeño slices directly to the skillet around the chicken. Cook for an additional minute or two to soften the jalapeños.
  • Pour the prepared peach sauce over the chicken and jalapeños, stirring gently to coat thoroughly. Simmer for about 5 minutes.
  • Check the consistency of the sauce; it should lightly coat the chicken and become thicker from the heat. Remove the skillet from heat when ready.

Notes
