Preparation

  • Measure out the low-sodium chicken broth, olive oil, and spices: kosher salt, onion powder, dried thyme, paprika, black pepper, and garlic powder.
  • Drizzle the olive oil into the bottom of the slow cooker.
  • Sprinkle and rub the chicken breasts with the kosher salt, onion powder, thyme, paprika, black pepper, and garlic powder on both sides.

Cooking

  • Place the seasoned chicken in the slow cooker in a single layer.
  • Pour the chicken broth over the chicken.
  • Cover the slow cooker and set it to cook.
  • Check for doneness by shredding it gently with a fork; if it pulls apart easily, it's ready.
  • Remove the chicken from the slow cooker once finished cooking. Serve as is or shredded with a drizzle of broth.

Notes

Ensure chicken breasts are similar sizes for even cooking. Avoid lifting the lid to maintain heat. Add more broth if needed towards the end of cooking for moisture.
