Preparation

  • In a mixing bowl, combine the lemon juice, olive oil, dried oregano or parsley, seasoning salt, black pepper, and onion powder. Whisk the ingredients together until well-blended.
  • Place the chicken breast halves into a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken and ensure each piece is thoroughly coated. Seal the bag or cover the dish, and let it marinate for at least 30 minutes.

Grilling

  • Preheat your grill or grill pan to medium-high heat.
  • Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill and cook for a few minutes on one side until golden brown with nice grill marks.
  • Flip the chicken and continue to grill until cooked through. Use a meat thermometer if available, ensuring the chicken is no longer pink inside.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing. Serve with lemon wedges.

Notes

Allow the chicken to sit at room temperature for about 15-20 minutes before grilling. Do not overcrowd the grill to ensure proper cooking.
