  • 1/2 Tbsp Chili Oil spiciness
  • 1/2 C Swerve Brown Sugar sweetness
  • 1/4 C Buffalo Sauce heat
  • 2 Tbsp Cider or Rice Vinegar tartness

Cooking

  • Heat your skillet over medium-high heat and add the chili oil until it shimmers but does not smoke.
  • Place the ground chicken in the skillet, pressing it down with a spatula. Brown on both sides for 3-4 minutes until golden.
  • Once browned, mince the chicken into smaller pieces and cook until fully cooked through and no longer pink.
  • In a mixing bowl, whisk together Swerve brown sugar, buffalo sauce, vinegar, ground ginger, garlic powder, salt, black pepper, and red pepper flakes to create the sauce.
  • Pour the sauce mixture into the skillet with the cooked chicken, stir well, and let the sauce thicken until it clings to the chicken.
  • Serve hot, garnished with scallions and toasted sesame seeds, and enjoy with rice or cauliflower rice.

Notes

Monitor browning closely, adjusting spice levels as desired. This dish can be doubled for larger servings, and consider garnishing with herbs or seeds for better presentation.
