Main Ingredients

  • 1 lb Ground Chicken, 92/8
  • 1/2 Tbsp Chili Oil Ensure the oil is hot enough before adding chicken.

Sauce Ingredients

  • 1/2 C Swerve Brown Sugar Can adjust for sweetness.
  • 1/4 C Buffalo Sauce
  • 2 Tbsp Cider or Rice Vinegar
  • 1 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Red Pepper Flakes Adjust for spiciness.

Instructions
 

Cooking

  • Heat a skillet over medium-high heat and add the chili oil, ensuring it's hot before adding the ground chicken.
  • Brown the chicken on one side for 3-4 minutes until golden, then flip and continue cooking until no longer pink.
  • Using a spatula, mince the chicken in the pan into smaller pieces while cooking.
  • In a mixing bowl, whisk together Swerve brown sugar, buffalo sauce, cider or rice vinegar, ground ginger, garlic powder, kosher salt, black pepper, and red pepper flakes until smooth.
  • Once the chicken is fully cooked, pour the sauce mix into the skillet and stir well to coat the chicken.
  • Cook until the sauce thickens and becomes syrupy.

Serving

  • Serve over rice or cauliflower rice, garnished with scallions and toasted sesame seeds.

Notes

For extra crunch, consider topping with crushed peanuts. Adjust the spiciness according to your preference. Garnishes like scallions and sesame seeds enhance flavors and presentation.
