  • 4 pieces boneless, skinless chicken thighs or breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil or sesame oil
  • 1 large ripe mango
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar or lime juice
  • 1 tablespoon fresh grated ginger
  • 1/2 teaspoon chili flakes
  • 1 tablespoon cornstarch

Preparation

  • Start by seasoning the chicken thighs or breasts with salt, pepper, and garlic powder. Ensure that the spices are evenly distributed.
  • In a large skillet, heat the olive oil or sesame oil over medium-high heat. Add the seasoned chicken pieces to the pan and brown them on both sides until golden.
  • While the chicken cooks, cut the mango into small pieces, discarding the pit and skin. Set this aside.
  • Once the chicken is browned, lower the heat and add the diced mango to the skillet. In a bowl, combine soy sauce, honey or maple syrup, rice vinegar or lime juice, grated ginger, and chili flakes. Whisk until blended.
  • Pour the sauce over the chicken and mango. Allow it to simmer gently, frequently spooning the sauce over the chicken.
  • To thicken the glaze, mix the cornstarch with a small amount of water and stir into the skillet until the sauce thickens.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. It can also be frozen for up to 3 months. When reheating, warm gently in a skillet with a splash of water.
