Ingredients
  

Chicken Preparation

  • 2 large chicken breasts Cut in half lengthwise.
  • to taste Salt & pepper For seasoning.
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Main Ingredients

  • 2 tablespoons olive oil For cooking.
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth Use whichever is preferred.
  • 1 cup little tomatoes (grape, cherry, etc.), halved
  • 1/3 cup Kalamata olives Drained.
  • 1 tablespoon capers, drained
  • 2 cups fresh baby spinach Packed.
  • 1/2 cup crumbled feta cheese

Instructions
 

Preparation

  • Cut the chicken breasts in half lengthwise to create four thinner cutlets. Season with salt, pepper, oregano, and garlic powder.

Cooking

  • Heat olive oil in a skillet over medium-high heat. Add seasoned chicken cutlets and cook for about 5-6 minutes on each side until golden brown and juices run clear.
  • Transfer cooked chicken to a plate. In the same skillet, add minced garlic, white wine or broth, halved tomatoes, olives, and capers. Cook for 3-4 minutes until tomatoes soften.
  • Stir in spinach and feta cheese. Return chicken to skillet and let everything warm together for about a minute. Adjust seasoning as necessary.

Serving

  • Serve immediately, garnished with extra pan juices.

Notes

For best results, use fresh ingredients and adjust seasonings to taste. Allow chicken to rest to keep it juicy.
