  • 2 lb chicken breasts Thawed, not frozen.
  • 1/2 tsp salt For seasoning.
  • 3/4 tsp Italian seasoning
  • 1/4 tsp paprika
  • 1/8 tsp black pepper Season to taste.
  • 1 cup heavy cream
  • 1 tbsp cornstarch To thicken the sauce.
  • 4 cloves garlic (minced) Adds flavor.
  • 1/4 tsp salt For seasoning.
  • 1/8 tsp black pepper Adjust to taste.
  • 1/3 cup sun-dried tomatoes (chopped)
  • 1/3 cup Parmesan cheese (grated) For added umami.
  • 1 cup fresh spinach To be added at the end.

Instructions
 

Preparation

  • Place the chicken breasts into your crockpot, arranged in a single layer.
  • Season the chicken with salt, Italian seasoning, paprika, and black pepper.
  • In a mixing bowl, combine the heavy cream and cornstarch until smooth, then pour over the seasoned chicken.
  • Add minced garlic, additional salt and pepper, and gently stir to incorporate.
  • Sprinkle in chopped sun-dried tomatoes and grated Parmesan cheese, gently mixing everything together.
  • Cover the crockpot and cook on low for about 6 hours.
  • About 15 minutes before serving, fold in fresh spinach and let it wilt.

Notes

To enhance flavor, add a squeeze of lemon juice before serving. Prepare ingredients the night before to save time.
