  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 1 tbsp fresh parsley, finely chopped plus extra for garnish
  • 1 tsp dried Italian seasoning
  • ½ tsp paprika optional, for color
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp lemon juice

For the Chicken Skewers

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

Preparation

  • Cut the boneless, skinless chicken breasts into 1-inch cubes.
  • In a mixing bowl, combine the olive oil, minced garlic, freshly grated Parmesan cheese, chopped parsley, dried Italian seasoning, paprika, salt, black pepper, and lemon juice. Mix until smooth.
  • Add the chicken cubes to the marinade, ensuring each piece is coated well. Allow it to marinate for at least 30 minutes.
  • Soak wooden skewers in water for about 30 minutes if using.

Cooking

  • Preheat your grill or grill pan.
  • Thread the marinated chicken pieces onto the skewers, leaving space between each for even cooking.
  • Arrange the skewers on the grill and cook until the chicken is firm and juicy, with grill marks, about 10-15 minutes.

Notes

For extra flavor, let the chicken marinate for a few hours or overnight. Rotate the skewers occasionally for even cooking. Don’t overcrowd the skewers on the grill; provide space for even cooking.
