Ingredients
  

Chicken and Marinade

  • 1.5 lb boneless skinless chicken breast, cut into 1 1/2-inch cubes (tender texture)
  • 1/4 cup low-sodium soy sauce (adds umami flavor)
  • 3 tbsp honey (provides sweetness and glaze)
  • 2 tbsp olive oil (helps with moisture and cooking)
  • 3 cloves garlic, minced (for aromatic depth)
  • 1 tsp fresh grated ginger (adds a warm spice)
  • 1 tbsp lime juice (offers brightness)
  • 1/2 tsp kosher salt (enhances flavor)
  • 1/2 tsp black pepper (adds mild spice)

Pineapple and Garnish

  • 3 cups pineapple chunks (juicy and sweet)
  • 2 tbsp chopped chives or green onion (for garnish and fresh flavor)
  • 8-10 pieces skewers, soaked if wooden (supports the kabobs)

Instructions
 

Preparation

  • Start by preparing the skewers. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • In a mixing bowl, combine the soy sauce, honey, olive oil, minced garlic, grated ginger, lime juice, kosher salt, and black pepper. Whisk until well blended.
  • Add the cubed chicken to the marinade and toss until well coated. Marinate for at least 15-30 minutes, or longer if possible.
  • Set aside the pineapple chunks. Optionally, toss them with a bit of the leftover marinade to enhance their flavor.

Assembly and Cooking

  • Once marinated, begin assembling the kabobs by alternating marinated chicken pieces and pineapple chunks on the soaked skewers.
  • Preheat the grill or grill pan over medium-high heat.
  • Place assembled kabobs on the grill and cook for about 10-12 minutes, turning occasionally until chicken is golden brown and cooked through.
  • Remove the kabobs from the grill and let them rest for a few minutes before serving.
  • Before serving, sprinkle with chopped chives or green onion for a fresh finish.

Notes

For best results, soak wooden skewers, marinate longer if time allows, space out kabobs on the grill, use fresh pineapple, and allow kabobs to rest after cooking.
