  • Slice the teriyaki chicken into bite-sized pieces, ensuring they’re roughly ½-1 inch thick.
  • In a large skillet over medium heat, add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  • Add the pineapple to the skillet with the chicken and cook for an additional 2-3 minutes until the pineapple caramelizes slightly and releases its juices.
  • In a bowl, combine the shredded romaine lettuce and diced tomatoes, tossing gently to mix together.
  • Remove the skillet from heat and warm the tortillas on a clean, dry skillet over low heat for about 10-20 seconds on each side.

Assembly

  • Place a scoop of the chicken and pineapple mixture onto a warm tortilla.
