  • 2 large boneless/skinless chicken breasts, about 1 ¾ lbs.
  • 1 oz. packet Taco Seasoning
  • 2 tablespoons olive oil
  • 8 oz. cream cheese, at room temperature Ensure it's softened for easy mixing.
  • 16 oz. Refried Beans Warm slightly for easier incorporation.
  • 16 oz. Salsa, equal to 2 cups Adjust based on spice preference.
  • 3/4 cups cheddar cheese, shredded
  • 3/4 cups Monterey Jack cheese, shredded
  • Fresh Parsley or Cilantro, to garnish Adds a pop of color.

Preparation

  • Start by heating the olive oil in a large skillet over medium heat. Once shimmering, add the chicken breasts.
  • Sauté until the chicken is golden brown and cooked through.
  • Remove the chicken, allow it to rest, and then cut into bite-sized pieces.
  • In the same skillet, add the cream cheese and let it soften over low heat, stirring until smooth.
  • Stir in the refried beans until fully integrated.
  • Pour the salsa into the skillet and mix well.
  • Return the diced chicken to the skillet and gently fold into the salsa mixture.
  • Sprinkle the shredded cheddar and Monterey Jack cheese over the mixture, stirring until melted.
  • Check the consistency and cook for an additional minute if needed.
  • Spoon the mixture into a serving dish and garnish with fresh parsley or cilantro.

Notes

Enjoy with scrambled eggs for breakfast, with rice or tortillas for dinner, or as a snack with tortilla chips. Store leftovers in an airtight container.
