Preparation

  • In a mixing bowl, combine the plain yogurt, minced garlic, grated ginger, fresh lemon juice, turmeric, garam masala, and cayenne. Stir until well combined.
  • Place the chicken in the bowl or in a resealable bag. Pour the marinade over the chicken, ensuring every piece is well-coated. Cover the bowl or seal the bag and marinate for at least 30 minutes.

Grilling

  • Preheat your grill to high heat.
  • Grill the marinated chicken for about 6 minutes on each side, or until fully cooked. Use a meat thermometer to check that the internal temperature reaches 165°F.
  • Remove chicken from the grill and let it rest for a few minutes before slicing to retain juices.
