Instructions
 

Preparation

  • Place the chicken thighs in the bottom of your slow cooker.
  • Add the chopped carrots, celery, and onion on top of the chicken.
  • Pour in the chicken broth, followed by the can of cream of chicken soup. Stir everything gently to combine.
  • Season the mixture with dried thyme, dried parsley, salt, and pepper.

Cooking

  • Cover the slow cooker and set it to cook on low for 6 to 7 hours.
  • About 30 minutes before serving, open the slow cooker and cut the biscuit dough into quarters. Place these pieces on top of the chicken and broth mixture.
  • Cover the slow cooker again and let the dumplings cook for about 30 minutes.

Notes

Ensure the chicken thighs are easy to shred and adjust herbs to taste. You can add more vegetables like potatoes or peas for extra nutrition.
