  • 1 lb ground beef (or ground turkey) Use lean meat for a lighter option
  • 1 can black beans (drained and rinsed) Canned for convenience
  • 1 can diced tomatoes No added salt for a healthier option
  • 2 cups frozen mixed vegetables (or fresh veggies) Frozen for ease; fresh can be used if preferred
  • 3 cups diced potatoes (fresh or frozen) Ensure potatoes are cut evenly for consistent cooking
  • 1 cup shredded cheese Cheddar or your favorite type
  • 1 onion (chopped) Enhances flavor profile
  • 1 packet taco seasoning Adjust based on spice preference
  • Salt and pepper to taste Season as preferred

Instructions
 

Preparation

  • Chop the onion and gather the ground beef or turkey, beans, diced tomatoes, frozen mixed vegetables, diced potatoes, shredded cheese, taco seasoning, and salt and pepper.

Cooking

  • In a skillet over medium heat, brown the ground beef or turkey until it’s no longer pink, breaking it apart with a spatula as it cooks.
  • Drain any excess fat from the meat, then add the chopped onion to the skillet and sauté briefly until it starts to soften, about a few minutes.
  • In the slow cooker, combine the cooked meat and onion mixture with the black beans, diced tomatoes, frozen mixed vegetables, and diced potatoes, stirring well.
  • Sprinkle the taco seasoning over the mixture, adding salt and pepper to taste. Mix again to combine all ingredients.
  • Cover the slow cooker and cook on low for about 4 hours until the potatoes are tender.
  • About 20 minutes before serving, sprinkle the shredded cheese over the top, covering the slow cooker to allow the cheese to melt.

Notes

Serve with toppings like avocado slices, sour cream, or cilantro. Pairs well with a side salad or tortilla chips. Leftovers can be used for burritos or wraps.
