  • 1 cup 2% milk provides creaminess and richness
  • 100 grams light cream cheese, cubed thickens and enriches the sauce
  • 2 cups chicken stock serves as the cooking liquid
  • 240 grams uncooked penne pasta acts as the base of the dish
  • 50 grams parmesan, finely grated adds a savory finish
  • Fresh finely chopped parsley (optional) to garnish, adds freshness

Instructions
 

Preparation

  • In a small bowl, combine all the seasonings to create your homemade spice mix.
  • Pat the chicken breasts dry with kitchen paper to remove excess moisture, then place them in the slow cooker.
  • Add the olive oil and seasoning mix to the chicken, stirring to coat.
  • Finely chop the red and green bell peppers, then add them to the slow cooker. Pour over the chicken stock.

Cooking

  • Cook everything in the slow cooker on high for 2.5 hours.
  • Once cooked, remove the chicken and slice it into rough pieces.
  • Add cubed cream cheese to the slow cooker and whisk to combine.
  • Stir in the milk.
  • Return the sliced chicken and uncooked penne pasta to the slow cooker.
  • Cook on high for an additional 30 minutes, or until the pasta has softened.
  • Add the finely grated Parmesan cheese and mix thoroughly.
  • Chop fresh parsley to garnish just before serving.
