  • 2 pounds chicken thighs (boneless, skinless, trimmed if desired)
  • 1 medium sweet or yellow onion, thinly sliced
  • 0.5 cup chicken broth (or bone broth)
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil (extra virgin)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Optional Ingredients for Serving

  • Cooked rice, quinoa, or pita
  • Fresh dill
  • Cherry tomatoes, sliced cucumbers, Kalamata olives, Tzatziki sauce, Lemon wedges

Instructions
 

Preparation

  • Place the chicken thighs at the bottom of your slow cooker.
  • Spread the thinly sliced onions over the chicken.
  • In a small mixing bowl, whisk together the chicken broth, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper until well combined.
  • Pour the mixture over the chicken and onions in the slow cooker.

Cooking

  • Cover the slow cooker and set it to cook on LOW for 5-6 hours or on HIGH for 3-4 hours.
  • Once cooked, shred the chicken in the slow cooker or remove it to slice.
  • Stir the mixture to combine everything, ensuring it is flavorful and moist.

Notes

Allow the chicken to marinate for a few hours if possible for better flavor. Use fresh herbs when available and consider sautéing the onions before adding them for added sweetness.
