  • 1 cup honey
  • 1/3 cup soy sauce Use a high-quality soy sauce for best flavor.
  • 4 cloves garlic (minced)
  • 1 tablespoon grated ginger
  • 1 piece bell pepper (chopped)
  • 2 cups broccoli florets
  • 1 cup carrots (sliced)
  • 1 cup snap peas
  • Salt and pepper (to taste) Essential for enhancing flavors.

Sauce Thickening (optional)

  • 1 tablespoon cornstarch Use to thicken sauce.
  • 2 tablespoons water Mix with cornstarch for slurry.

Instructions
 

Preparation

  • Lay chicken breasts in the bottom of the slow cooker, ensuring they touch slightly but do not overlap.
  • In a bowl, mix honey, soy sauce, minced garlic, and grated ginger. Pour over chicken.
  • Add the chopped bell pepper, broccoli, sliced carrots, and snap peas on top of the chicken and sauce.
  • Season with salt and pepper to taste, balancing the existing flavors.

Cooking

  • Secure the lid on the slow cooker and cook until chicken is tender and fully cooked.
  • If a thicker sauce is desired, mix cornstarch and water in a bowl, then add to the slow cooker after removing the chicken. Stir until sauce thickens.

Notes

Serve over rice or quinoa. Leftovers can be packed for lunch and are enjoyable cold or heated.
